Baso and Pizzo-Set assembly instructions:
NB! When installing the table, at first do not tighten the nuts all the way. Do the final tightening when all the table parts are installed and the diagonal measurements (+/- 2 mm) are in place.
- Take 2 legs (part no. 1 ) and connect them to the lower shelf plate (part no. 5 ). The legs are identical and fit in every corner. Follow the location of the logo on the shelf plate. NB! If you have a version with wheels, the lower part of the leg must be raised (by the height of the wheel) 12 cm upwards. NB! This must be done at the very beginning, because it is much more difficult to do later. Install the wheels.
- Do the same with the other 2 legs.
- Place the pairs of legs in a sideways position and connect them with the side profiles (details no. 4). Place the cardboard of the package under the legs so that the side on the ground is not scratched.
- Install the handle mounts on one side (part no. 2 or 3), then the handle tube (part no. 8) and the other side of the handle mount.
- Install the side supports 8 pcs (part no. 7).
- Check the lengths of the diagonals, move the legs in the corresponding direction for correction.
- Finally, tighten the nuts.
Baso-XL and Pizzo-XL-Set assembly instructions:
- Place the pairs of legs in a sideways position and fasten the shelf plates to each other with fastening angles (part no. 11). Fasten the shelf boards together from the inside with bolts. Place the cardboard of the package under the legs so that the side on the ground is not scratched.
- Connect the side profiles (parts no. 4 and 12) NB! Make sure that the edges of parts No. 4 are aligned, i.e. the assembled part is straight.
- Before the following activities, decide which side the oven will be on.
- Install the middle support beam (part no. 9). Make sure that the word “Pizzo” faces the pizza oven.
- Install the supporting beam of the side table (part no. 10).
- Install the handle mounts on one side (part no. 2 or 3), then the handle tube (part no. 8) and the other side of the handle mount.
- Install side supports 8 pcs (part no. 7)
- Check the lengths of the diagonals, move the legs in the corresponding direction for correction.
- Install the side table (part no. 13). NB! One bolt with a special washer (part no. 14) is attached at the factory in the right front corner of the side table. Remove it and attach the side table to the frame with the same bolt in the same place. Install the washer between the side table and the frame. Install the remaining bolts as usual.
- Finally, tighten the nuts.
Installation of the pizza oven on the stand/table:
NB! The pizza oven weighs 80 kg, therefore two people are needed to lift it. Install the oven calmly, avoid sudden movements and follow work safety. The bottom of the pizza oven is fitted with threaded bolts at the factory. The pizza oven is packed on the pallet this way that the bolts are “in the air”, i.e. not resting on the surface. When installing the pizza oven, it must be ensured that the oven is lifted from the pallet directly onto the table and not placed on another surface in the meantime. Not following this instruction may damage the mounting bolts or their threads.
- Place the pizza oven on the stand/table so that the bolts fit into the mounting holes. NB! Make sure that the oven is placed correctly on the table.
- Install the nuts and tighten. NB! If necessary, hold the bolt with a hex key if it should move instead of the nut.
- Once the oven is installed, tighten all the table fixing bolts.
- Remove the film from the stainless steel parts: Pizzo-inox version, Baso-XL side table, shelves, flame protector.
- Install the chimney, thermometer and chimney cap.
- Make sure that there are no packing materials in the oven and that the oven is correctly attached to the table.
After assembly, the pizza oven is ready for use. Cooking pizzas starts with heating up the oven. Here are some tips for use:
- Use only wood with a low tar content such as alder, oak, ash, beech or maple.
- Use dry wood that gives a lot of heat and burns well.
- To achieve more heat, normal-sized logs can be cut smaller with an ax.
- It takes very little wood to make pizzas – you can heat the oven for an hour with just a few pieces of wood.
- Heat the oven for 20-30 minutes, depending on the outside temperature.
- The pizza oven works very well in winter, even at -25°C. However, a longer warm-up time must be taken into account.
- If the thermometer shows +300 – 350°C, you should wait about 10 minutes for the stones to reach an even temperature.
- The best temperature for cooking pizza is between 300 – 350°C.
- Pizza cooking time in the oven is 1-2 minutes depending on the temperature. The pizza must be turned around 180 degrees in the oven during cooking.
- In addition to pizza, the pizza oven can bake bread, ciabatta, focaccia and many other pastries.
- When the pizzas are baked, don’t let the heat escape into the open air, but put a pan or pot with a lid in the oven and cover the chimney with a lid. The oven keeps the heat for about 2 more hours.
Thermometer and water condensation on the inner surface of the thermometer glass: Due to weather conditions such as rain and temperature fluctuations, as well as peculiarities due to the location of the oven, water droplets or mist may form on the inner surface of the thermometer glass. This does not interfere with baking, as the heat of the working oven evaporates the moisture accumulated in the thermometer. The thermometer is not 100% waterproof, steam or water droplets on the inner surface of the thermometer glass is a natural process.
Cor-Ten steel models (Pizzo, Pizzo-Set, Pizzo-XL-Set, Baso, Baso-XL) and surface treatment:
The oven comes with a more comprehensive guide on Cor-Ten steel maintenance. If you choose the quick rust version of the guide, remove the stainless steel shelves from the Baso models during the process (parts no 6 and 13). On the pizza oven, remove the door, chimney, thermometer and door support panel. Spray the water carefully, as a light mist, and avoid water entering the inside of the oven through the chimney opening. It is recommended to cover the oven opening and chimney openings with cardboard or paper during the process. All instructions can be found on the web: www.grillsymbol.com.
Instructions for the management of possible faults to ensure a delicious final result:
Name of the fault: | Caused by: | How to manage: |
No traction in the smoker. | The flap of the chimney is closed. | Remove the flap. |
Oven gives out soot. | Wood wet, wrong type of wood. | Use dry wood for heating. Use wood with low tar content (alder, fruit tree, oak). |
Black (dark) smoke. | Wrong heating substance. If the oven is cold, at the beginning dark smoke is quite common. | Use dry wood for heating. Use wood with low tar content. |
Pizza sticks to the stone. | The stone base has not reached the same temperature as the air in the oven. | Wait until the stone base reaches an even heat. If the oven is +300°C, the stone will reach the same temperature in about 10 minutes. NB! Let the stone burn clean. |
The pizza is burning on top. | Too much firewood and the flame is too big. | Wait and let the flame settle down a bit. |
Pizza has too strong smoke flavor. | You’ve just added wood (with bark) and it generates more smoke at first. | Wait and let the flame settle down a bit. |
The top of the pizza is ready, but the bottom is raw. | Too much tomato sauce does not allow the pizza to cook through. | Put less tomato sauce on your next pizza. |
There is food waste on the pizza stones. | During pizza making, it still happens that something from the pizza falls inside the oven. | Let the stone burn clean. Heat between +300-400°C quickly burns all food residues. |
Some stainless steel parts have started to rust. | The rust has spread from Corten steel to stainless steel. | Clean with a rough side of the sponge or an abrasive dishwashing cloth. Do not use sandpaper. |
